So Here's the Situation...
As I would assume you've already figured out, I married a vegetarian — which of course implies that I am not one. That means I had to either be that spouse who never cooks, learn to cook without meat or make two versions of every meal. That last one can be overwhelming.
So what's the solution? Create recipes I personally would also eat. Spaghetti with vegetarian "meat." Chili with vegetarian "meat." Tacos with vegetarian "meat." You get the idea. But then there's the other side of this. Vegetarians don't necessary want everything to be based on what meat-eaters like. That's where a hearty potato soup or a masterful mac n' cheese will make you a hero.
